I am all about simple these days so when the air turns cooler and fall is in the air, I look for all the fall recipes! These super simple, two-ingredient pumpkin muffins are the perfect warm treat for our family! I love whipping up a batch of these and giving them as a treat for breakfast or giving them as a tasty after-school snack!
Super simple pumpkin muffins
This recipe is seriously so simple! All you will need is a spice cake mix (or any cake mix will do!) and one small can of pumpkin. That is really all you need! The pumpkin makes the muffins SO moist and delicious!
Once you have the ingredients on hand, just mix the dry cake mix with the canned pumpkin well. (No need to add the ingredients at the cake mix suggests!)
I use cupcake liners in my muffin tin and fill them up so we have nice big and yummy muffins!
Toss them into the oven for 20 mins and done! A yummy and cozy fall treat your family will love!
Easy Pumpkin Muffin Recipe
Ingredients
- One box of cake mix (we prefer spice cake mix)
- One 15 oz. can of pumpkin
Directions
Preheat the oven to 350 degrees.
Next, with a mixer, combine the dry cake mix and the canned pumpkin. Mix until it’s well incorporated.
Spray a large muffin tin with non-stick spray or line them with cupcake liners. Fill each liner about 2/3 full.
Bake in the over for 18-25 minutes (until toothpick comes out clean).
Let cool and enjoy!
Make them extra yummy
My four-year-old had a great idea to make these muffins extra yummy…add chocolate chips! I simply added about a 1/2 cup of semi-sweet chocolate chips after mixing the batter. They are delicious!

1 box of spice or yellow cake mix
1 can (15oz) pumpkin
Directions
- Preheat the oven to 350°. Line a cupcake or muffin pan with cupcake liners.
- Mix cake mix and pumpkin in a large mixing bowl or Kitchen Aid mixer.
- Stir in chocolate chips (if you prefer!)
- Scoop into cupcake liners and fill about half full. Bake for 18-25 minutes and let cool completely.
